Basic Simple Syrup Recipe

- 1 cup water

Combine sugar and water
Add equal parts sugar and water to a small saucepan. You do not need to measure precisely β the ratio is 1:1 by volume.

Heat over medium, stirring until dissolved
Heat over medium heat, stirring continuously. The sugar dissolves in 2β3 minutes. You do not need to bring it to a boil β just heat until completely clear with no sugar granules visible.

Cool and store
Remove from heat and let cool to room temperature. Pour into a clean jar or squeeze bottle. Refrigerate for up to 1 month.
Flavoured Simple Syrups
- Vanilla: Add 1 tsp vanilla extract or a split vanilla bean when heating.
- Mint: Add a large handful of fresh mint leaves after removing from heat. Steep 30 minutes, strain.
- Lavender: Add 2 tablespoons dried lavender flowers. Heat gently, steep 20 minutes, strain.
- Ginger: Add 5β6 slices of fresh ginger when heating. Steep 20 minutes, strain.
- Cinnamon: Add 2 cinnamon sticks when heating. Steep until cool, strain.
- Lemon: Add strips of lemon zest when heating.
What to Use Simple Syrup For
Cocktails (mojitos, margaritas, Old Fashioneds). Iced coffee and iced tea. Lemonade. Smoothies. Drizzled over pancakes, French toast or cake. Brushed onto cake layers to keep them moist.
